Maturation held steady in the cellar-cool, temperature-controlled climate of grandpa’s hand-built cool room; paying homage to the stillness and quiet constancy of a man from who we learnt, that nothing need ever be hurried.
There are no shortcuts or showmanship.
Just clarity of flavour – tropical and inviting on the nose: Pineapple leads with soft oak and a fine thread of vanilla. On the palate, warm spice gathers – cinnamon over crisp green apple and subtle oak – with texture, balance, and a restrained bourbon sweetness. The finish is clean and dry, a flicker of gentle heat as the fruit recedes — light, refreshing, and inviting another sip.
